Easy 5 Ingredient Spanish Dish

In honor of Cinco de Mayo we have a family favorite for you to try. Cinco de Mayo, which translates to "Fifth of May" in Spanish, is a holiday that commemorates the Mexican army's victory over the French Empire at the Battle of Puebla on May 5, 1862. Despite common misconceptions, Cinco de Mayo is not Mexico's Independence Day (which is celebrated on September 16th), but rather a celebration of Mexican heritage and pride, particularly in the state of Puebla where the battle took place.

Today, Cinco de Mayo is celebrated in various parts of Mexico, but it is more widely observed in the United States, where it has evolved into a celebration of Mexican culture and heritage. Festivities often include parades, music, dance performances, traditional Mexican cuisine, and other cultural activities. It's a time for people to come together, enjoy Mexican food and drinks, and appreciate the rich cultural contributions of the Mexican community.

Popular foods and drinks enjoyed during Cinco de Mayo celebrations include tacos, enchiladas, guacamole, salsa, margaritas, and Mexican beers. Many restaurants and bars offer specials or host themed events to mark the occasion. But we have our favorite 5 Ingredient Spanish Dish.

5 Ingredient Spanish Dish:

I love this dish because I can throw it together as soon as I get home and we eat shortly after. You can also change it up to your liking. I've added different types of beans, corn, rotel and many other items. 

Ingredients I use:

1 large 31 oz can of refried beans

1 box of beef or chicken taquitos

1 can of corn (drained)

1 large can of enchilada sauce

1 (8 oz) bag of taco blend cheese

Instructions:

1. Grease your casserole dish and preheat the oven to 375. 

2. Add the refried beans then spread out in the dish.

3. place frozen taquitos on top of the beans but do not layer them. 

4. Add drained corn on top of taquitos.

5. Pour enchilada sauce over all ingredients.

6. Add cheese to the top.

7. Cook in the oven for 30-35 minutes or until the cheese is melted and golden brown. 


I offer several additions to this dish; lettuce, tomatoes, guacamole, sour cream, lime wedges, and salsa. We also have bags of Doritos and corn chips available for anyone who may wish to scoop it up.
