Grilled Lemon Herb Chicken

Grilled Lemon Herb Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 lemons (zest and juice)
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions:

  1. Prepare the Marinade:
    • In a bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, chopped rosemary, thyme, parsley, salt, and black pepper.
  2. Marinate the Chicken:
    • Place the chicken breasts in a resealable plastic bag or a shallow dish.
    • Pour the marinade over the chicken, ensuring each piece is well coated.
    • Seal the bag or cover the dish and refrigerate for at least 30 minutes to 2 hours for the flavors to meld.
  3. Preheat the Grill:
    • Preheat your grill to medium-high heat.
  4. Grill the Chicken:
    • Remove the chicken from the marinade and let any excess drip off.
    • Place the chicken breasts on the grill and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
    • If the chicken starts to brown too quickly, move it to a cooler part of the grill.
  5. Rest and Serve:
    • Remove the chicken from the grill and let it rest for 5 minutes before slicing.
    • Serve the grilled lemon herb chicken with your favorite summer sides such as a fresh salad, grilled vegetables, or corn on the cob.
