Our Kids Favorite Chicken & Rice Dinner

Chicken & Rice Dinner 

As busy parents it is often hard to find meals that our whole family enjoys and it's quick to make. I am constantly searching for recipes as we get tired of having the same thing over and over. This dish can be put together in about 5-10 minutes and put in the oven to cook. While it is in the oven, you can help with homework, get baths for the children or just sit down for a few minutes and take a break. There is also very minimal clean up from this recipe, which I love.

Ingredients:

Cooking spray

Knorr Rice Sides - Chicken or Chicken & Broccoli flavored (2 bags)

Cream of Chicken Soup-unsalted (2 cans)

Water (1 can)

Boneless skinless chicken tenderloins (6 -10)

Seasoning salt (amount is up to you)

Mozzarella cheese shredded (cover chicken & rice) 

Parmesan cheese  - sprinkle over mozzarella cheese (you can use finely grated or shredded)

Foil (enough to cover casserole dish) 




Step 1: Preheat the oven to 375 while you get everything gathered.  

Step 2: Grease your casserole dish. 

Step 3: Empty both bags of Knorr Rice Sides into the casserole dish. 

Step 4: Add the cream of chicken soup & the can of water.

Step 5: Mix the rice, cream of chicken soup & water together with a spoon.

Step 6: Place your chicken tenderloins over top of the rice mix spaced evenly. 

Step 7: Sprinkle seasoning salt over each tenderloin to your liking, my family tries to use it sparingly to avoid excess salt.

Step 8: Cover rice & chicken with mozzarella and parmesan cheese. 

Step 9:  Then place the foil over the casserole dish.

Step 10: Place the casserole dish in the oven. 

Step 11: Bake for 45 minutes covered. 

Step 12: Remove from the oven and take the foil cover off, then place back in the oven for 15 minutes or until cheese is golden brown and fully melted. 

Step 13: Remove from the oven and allow casserole to cool a bit. 


You can serve this dish with anything really we love it with salad and a bread choice or some asparagus and corn.
