Butternut Squash Bisque- made simple with Cuisinart

Your new favorite soup recipe that is perfect for your Thanksgiving menu

I love soup, all kinds of soup. There’s something nurturing about making a pot of soup and I enjoy it for lunch or dinner, and especially like the leftovers. Soup is one of those foods that gets better the next day, and when I’m most organized I’ll make a big pot on Sundays to enjoy all week. The only part I don’t enjoy about soup is the prep work. Most soups I make start with a combination that might include carrots, onion, celery, garlic, cabbage, zucchini and other veggies.  Healthy yes, but also time consuming.  

Enter the Cuisinart Elemental 11 Food Processor.  They sent me one to try, and it’s a total game changer. It’s shaved soup prep work by a good 20 minutes or more, and that’s just soup! The stainless steel blades easily chop, grate and puree and the 11 cup work bowl accommodates a hefty portion setting me up for great lunches! 

I enjoy cooking, but am not a fan of gadgets or appliances that serve only one purpose-they take up valuable kitchen space.  This Cuisinart Food Processor can be used for too many foods to mention.  I’m making dressings and dips, chopping veggies for meals, grating cheese and using up leftover bananas to make a yummy frozen dessert.  It can even mix dough! It’s the type of appliance you’ll want to leave on your counter because you use it all the time, and the modern design looks good too. 

The first thing I made with my Cuisinart was my favorite Butternut Squash Bisque recipe.
This is a no-fail recipe, and the Cuisinart  Elemental 11 Food Processor makes it a breeze with its ability to chop and puree. Watch my video for step by step directions. 
Butternut Squash Bisque   
  • 3 carrots
  • 3 celery ribs ( leaves welcome)
  • 2 medium leeks white p arts only
  • 1 jalapeno pepper 
  • 2 lbs butternut squash, peeled and cubed ( about 6 cups)
  • ¼ cup butter
  • 2 cans broth (14 ½ ounce each)
  • ½ ginger, fresh or dry
  • ½ tea salt 
  • ¼ pepper
  • ½ cup half and half

Optional garnish: pecans
